apple spiced oats
Ingredients:
1 cup old-fashioned rolled oats
2 cups unsweetened almond milk (or any milk of your choice)
1 large apple, peeled, cored, and diced
1 scoop (about 25g) vanilla protein powder
1 tablespoon maple syrup (optional, depending on sweetness preference)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon vanilla extract
Pinch of salt
Toppings: Sliced almonds, chopped walnuts, or Greek yogurt (optional)
Instructions:
In a saucepan, combine the rolled oats, almond milk, diced apple, vanilla protein powder, maple syrup (if using), ground cinnamon, ground nutmeg, ground ginger, vanilla extract, and a pinch of salt.
Bring the mixture to a boil over medium heat, then reduce the heat to low.
Simmer for 8-10 minutes, stirring occasionally, until the oats are cooked, and the apples are tender.
Remove from heat and let it sit for a minute to thicken.
Adjust sweetness with more maple syrup if desired.
Serve the oatmeal in bowls, topped with sliced almonds, chopped walnuts, or a dollop of Greek yogurt if you like.
